Roast Beef Romaine Roll-Ups

Fasten your seatbelts, as this is yet ANOTHER addition to the ‘so easy to make you’re going to fall out of your chair’ club.

Once upon a time, I was on the road for NHRA in St. Louis. Mind you, this was nearing the end of the 2nd week of the paleo challenge. The caterer put out a nice spread of everything needed to make yourself a giant delicious sandwich for lunch. My paleo rookie brain quickly thought “WOO YUM SANDWICHES” before common sense kicked in and was like hey kiddo, remember- you can’t eat the bread. Or the cheese. WTF.

So I needed to get creative. Thus, I took some lettuce, cold cuts and vegetables and tried to deal with my gluten-free disappointment. Then I remembered that Asian Lettuce Wraps are a thing. So maybe rolling my meat in a leaf of iceberg wasn’t so strange after all.

Thus were born… Roast Beef Romaine Roll-Ups.

Try not to harm yourself with the sharp objects needed to execute this one. Simple, yet dangerous.

Shopping List:
– A package of Romaine Hearts
– Sliced Roast Beef (Boar’s Head is my go to, but choose whichever is your favorite. Or on sale.)
– Sandwich Sliced Dill Pickles (My preference is Trader Joe’s Organic Kosher Sandwich Pickles. Watch the ingredients on some of your run of the mill supermarket brands… they tend to sneak sugar in.)

Instructions:
Wash and then lay 4-5 romaine hearts flat.
Next, lay one slice of roast beef onto each leaf.
Next, the pickle goes perpendicular (say that 10x fast) to the lettuce. Roll it up and secure with a toothpick to hold in place.

EAT LUNCH!
