Balsamic Spinach Meatloaf

Because I haven’t already posted enough about meatloaf… Here is yet another incarnation of this magically easy and delicious concept. This time, it’s coming straight off the top of my head. I won’t be able to tell you if it’s delicious or not for another 40 minutes when it comes out of the oven.

40 minutes is a long time. Thankfully, Pandora is providing a stellar selection of tunes for a dish-doing dance party. Like this song. Songs like this make me love driving down the street with the volume cranked up higher than it should be.

Anyhow. Why spinach? Because you apparently can’t buy it in small quantities, and I only needed a small amount for those spinach herb burgers I made by PaleOMG last week. I’m still struggling to get through the bag, and am not sure how many more spinach omelets I can handle. This bag is actually bigger than my head. See for yourself.

So… what to with all this spinach? Make a meatloaf! That works, right? I was out of onions so plain old Italian was out. Sometimes you just need to go with the flow and see what happens. Here is what went into my efforts:

Balsamic Spinach Meatloaf

Preheat your oven to 375 degrees. In a bowl, mix the following ingredients and then bake in a loaf pan for 40 minutes:

  • 1 lb ground meat (I used a combination of beef, veal and pork)
  • 2 cups spinach, chopped
  • 1 tbsp garlic powder – that’s right… I said TABLEspoon
  • 1 tsp thyme
  • 1 tsp basil
  • 1 tsp oregano
  • 2 tbsp coconut flour
  • 1 egg
  • 1/4 cup Steve’s Original Paleochef Tomato Balsamic Sauce

Darn it. I should have gone back and read my old recipes telling me 375 degrees is the way to go. It’s now fixed above. I just cooked it at 350 for 40 minutes and it isn’t done yet. Boooo…. back into the oven with the temps cranked up another 25 for 10 more minutes and let’s see how this goes. Come on, meatloaf – I want to eat you!

Meatloaf is done! Survey says – this is some tasty business right here, but I have modified the recipe above slightly from how I actually prepared it. I used a half cup of the Paleochef sauce, but I think that may have been too much. Going to take it down a notch next time.

Aside from that, I’ll be patting myself on the back for this one once I finish stuffing my face.
