Omelet Bites

Skittles. Taste the rainbow. Unfortunately junk food USA took a good piece of nutritional advice, went off and ruined it. It’s true though… supposedly the more colors are on your plate, the more types of nutrients you’re taking in. Unless, of course, it’s a rainbow sprinkle donut. Anyway, it’s this simple piece of advice that I kept in mind on this next one. In keeping with the super easy fall out of your chair tastes great as time-saving leftovers and all that jazz theme that I usually go with, let’s make breakfast without all the meat.

Just kidding. There’s bacon in these. Mmmmm bacon. Leave it out if you must, I just don’t understand why you’d do such a silly thing.

Omelet Bites

– Spinach
– Assorted color Bell Peppers
– White Onion
– Tomato
– Bacon
– 8 Eggs
– Salt & Pepper to taste

Easy easy instructions, folks. Day 1 of the Lurong Living Paleo Challenge is coming fast, and it would probably be a good idea to whip up a batch of these Sunday morning.

Preheat the oven to 350 degrees.

In a skillet over medium heat, cook 4-6 slices of bacon about 75% of the way through.

When the bacon is done, saute chopped vegetables in the leftover bacon grease until they begin to cook through.

Crack eggs into a mixing bowl, season with as much or little S&P as your little taste buds desire, beat the eggs.

Cut bacon into small pieces, stir into veggie mix.

Evenly portion out the veg/bacon mix into a cupcake pan lined with silicone baking cups, pour egg mixture over to fill.

Bake for 17ish minutes, then enjoy!
