Another installment under ‘insanely easy to make’. Perhaps I should consider making that an actual category all up in here. Zucchini fritters! However, last time I made them, they seemed a bit more like pancakes to me. Whatever. I still ate the whole batch. Whoooops.

I’ve got to say that drying out shredded zucchini is an interesting task. Maybe my fritters were soupier than expected last time, because I was on my last paper towel in the whole entire house, and had limited resources to work with.
I definitely recommend a quilted paper towel that allows you to twist when wet and not rip. Wringing it out worked best for me when I replenished my supply of the quilted quicker picker upper and went on to make zucchini muffins a couple weeks later.
Bolognese side dish, fritters, muffins. I know what you’re thinking. This girl really likes zucchini. I swear, next dinner recipe won’t have zucchini in it. Promise.
