What’s that spell? Home! I am finally home from my annual work-related travels that essentially eat up all of February. That’s why it’s March 1st and I’m finally getting back to the blog. I’ve been in go mode since I landed from AZ Monday evening (actually sprinted straight from the airport to CrossFit, no joke) and haven’t taken the time to do things responsible adults do when they get home from long trips. Like… laundry and grocery shopping. Too tired to make a big ol’ grocery list, I’ll do that tomorrow. However, it’s Friday and I cannot stand one more meal OUT.
En route from the box home tonight I made a pit stop. Okay, so I made 2 pit stops… the first was the liquor store to replenish my wine supply. THEN I went to the grocery store for ingredients for something quick yet paleo. So, what’s crazy easy enough to make you fall out of your chair after a 54 hour work week? Chicken, vegetables, sauce. Steamable stir fry veggies and PaleoChef Ginger Cilantro sauce… go on do your thang! I’m hungry.
Maybe I could have cut the chicken pieces a bit smaller. I didn’t feel like it. Step one, heat skillet with EVOO. Throw in some minced garlic. Cook the chicken.
Add in the sauce while you finish off the chicken. Steam veggies. Toss those in too. Reduce over medium heat.
What did I learn in the past half hour?
- Not gonna lie… this could have used a TON more garlic. Also hoped for a bit more bite, cilantro style.
- This flavor combination goes well with Sauvignon Blanc.
- Note to whoever writes the instructions for ShopRite brand veggies: You probably should have thought about your opening line a bit more carefully…
