Carrot Scallion Pancakes

I get it. These things are odd. I’m not going to even try to convince you that making dinner out of a ton of carrots is a normal idea, but hear me out. When I say caveman diet, you think of me with a Fred Flintstone-esque turkey leg in my hand. Believe it or not, eating paleo isn’t just about chowing down on as much meat as possible.

Don’t get me wrong, I love me some anything wrapped in bacon, but it IS possible to make a vegetarian paleo recipe. Want to know what else is great about this recipe? It’s SO EASY YOU’LL FALL OUT OF YOUR CHAIR. Ahaha I love saying that. You + chair = notsomuch. Let’s get to it.

CARROT SCALLION PANCAKES

Ingredients:

  • 3 cups shredded carrots
  • 3 scallions, finely chopped (use your judgement here, if you want more… add more)
  • 3 eggs, whisked
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon coconut flour
  • Olive or Coconut Oil, for frying

Step 1: Have fun shredding the carrots. I’m not going to lie to you, it’s a bit tedious. I am still trying to figure out a way myself to move things along and get this part done quickly.

Step 2: In a large bowl, combine essentially everything. Carrots, scallions and eggs… followed by the salt and coconut flour to thicken the mixture slightly.

Step 3: Heat a few tablespoons’ worth of oil in a large skillet. When it’s ready, scoop your pancake-sized pile of “batter” into the skillet. Pan fry each side over medium heat until browned and crispy. Flip and repeat. When they’re done, it’s a good idea to do what you do with bacon, and put them on a paper towel at first.
