I have this habit of buying sweet potatoes and forgetting to use them in time. One day I will make those sweet potato chips, I swear.
Until then, sweet potato ‘fries’. By no means is this a original idea, but I was running low on other veggies and the chicken on my plate needed a friend.
Again, easy peasy instructions. Wash, peel and slice your sweet potato.
Toss your cut up potato into a ZipLoc bag with olive oil and some random seasoning, then make like Outkast and shake it like a polaroid picture.
Bake on a cookie sheet lined with parchment paper at 325 degrees for 30+ minutes, until they are cooked through. Getting these things to crisp up wasn’t exactly the easiest thing to do… I kind of failed. But you wouldn’t know it by looking at them. Ah, the deceptive magic of photography!
Back to FUN WITH FLAVORS. For some reason, I gravitated toward the seasoning pre-mixed for Montreal Chicken. I’ve never been to Canada. Anyone want to take a road trip with me? I hear Montreal is nice. On the way, I can prove to you that sung out loud in its entirety, 99 Bottles of Beer on the Wall is 10 minutes long.
