Oh the random things you can spend your time pondering instead of doing something productive with your life… so answer me this, internet.
– Why is it called mahi mahi? One mahi just wasn’t enough?
– Does anyone else get really excited when the outstanding balance of a loan you have decreases by a digit? Welp, the mortgage went from 6 digits to 5 today. That was fun.

– WHY did Stop & Shop not have ANY fresh cilantro in stock today? Not cool, produce department, not cool.
Tacos. On to the tacos. Not sure they even tasted like tacos, but they did taste like lime and delicious. Fishy they were NOT. If you’re cooking for someone who isn’t into fishy fish, winner winner (could pass for chicken) dinner. Apologies in advance for the less than stellar photos. I was hungry.
Mahi Mahi Tacos
For the tortillas – Incredibly easy recipe by the Civilized Caveman, which I halved due to the fact that per usual I was cooking for me, myself and I.
1 Egg
1 cup Almond Flour
1/2 tsp Extra Virgin Olive Oil
1/4 tsp Salt
I added in Pepper and garlic powder for kicks.
Preheat oven to 350 degrees. Mix all ingredients in a small bowl until it resembles a paste. In between 2 pieces of parchment paper, portion out the dough and roll it out. Discard the top layer of parchment paper, then bake for 7-8 minutes.
What’s that you say? You’re single and don’t have a fully stocked kitchen full of crazy cooking tools like all your married friends? Then, chances are damn good you’ve got a bottle of wine hanging around. An empty wine bottle makes a great rolling pin.
The Fish
1 filet Mahi Mahi
1 Jalapeño Pepper
Minced Garlic
Juice from half a lime
EVOO
Southwest Seasoning
Salsa of choice
Avocado
Heat EVOO and lime juice in a skillet over low-medium heat. Saute minced garlic and diced jalapeños for a few minutes. Once the jalapeños start to turn from that attractive kelly green to that not so attractive olive green hue, push it all aside and place your mahi mahi filet (dry rubbed with southwest seasoning) into the center of the skillet. Depending on its thickness, it shouldn’t cook more than 3 or more minutes a side.
Once the fish is done and flaked into small pieces, load the mixture into the warm fresh tortillas along with avocado slices and salsa of your choice.
Próxima vez, voy a añadir piña, cilantro y cebollas.
