Bulletproof Peppermint Mocha

HO HO HO! Thank heavens that pumpkin spice season is over. ‘Tis the season for the reason to overdo it on another ubiquitous holiday flavor profile. Peppermint Mocha!

Mint is such a wonderful flavor – it justifies going to town on a bowl of mint chocolate chip ice cream in the name of being a great breath freshener. Right? Oy. This ‘logic’ of mine is the reason I don’t keep ice cream in this house. Too dangerous.

So Santa came early. He brought me not one, not 2, but THREE cool things on Saturday. First, Peppermint Bark Progenex! I missed out on the limited run last year, so I made sure to hop on the order train right after Thanksgiving as not to miss out 2 years in a row. Secondly, he brought me the 155 squat clean PR that I had a few solid misses on last Sunday at open gym. That was an awesome moment. Third, he brought a Lululemon Vinyasa Scarf in PURPLE FLEECE. Have I yet raved over how wonderful those scarves are on airplanes? A lulu vinyasa scarf is so big it’s practically a blanket. Can’t wait to take it on my next trip. On my trip to Arkansas a couple weeks ago, the airplane blanket did nothing to help my toes keep from going numb.

Anyone who follows me on IG is aware I didn’t have the box for more than 3 minutes before busting the Peppermint Bark open. However, I checked the mail in the morning and the CrossFit Factory Square in-house throwdown was coming quick. I had to get my butt out of the house and down to the box. What’s a girl to do with a new flavor of protein and a need for caffeine on a quest for a new PR?

Bulletproof Peppermint Mocha

– 1 scoop Progenex Recovery – Peppermint Bark
– 1 tbsp Unsalted Grassfed Butter (My preference is Kerrygold)
– 1 tbsp Coconut Oil
– Splash of So Delicious French Vanilla Coconut Milk Creamer (Found at Whole Foods)
– Splash Pure Vanilla Extract
– 1 cup Hot Coffee

Helpful Appliance Recommendation: A hand blender. If you don’t yet have one, perhaps include it on your Christmahanukwanzaakah list? Here’s the one I use. Also, I love my Keurig.

My process is the same for my traditional daily fix of Bulletproof Coffee:

In a glass measuring cup, measure out all the ingredients minus the coffee. Then, pour the hot coffee over the ingredients to kickstart the fat’s melting process. This is when I just let the Keurig drip onto it and melt it all slowly.

Once your fat solids have begun to liquefy (I usually let it sit for a minute) mix it all up with your immersion blender until it’s smooth and frothy.

Take THAT, Starbucks!
