Paleo Apple Cinnamon Muffins

Much like Aerosmith, these muffins rock. Plus, they’re much better for you than any blueberry chocolate chip bran abomination you’re going to find at your local coffee shop. I’m not sure who isn’t a fan of the classic combination of apples and cinnamon. Let’s get on with this week’s sweetened kitchen adventure.

Again, we have Juli Bauer of PaleOMG to thank for this one. Her Apple Cinnamon Muffins are a fantastic way to trick yourself into thinking you’re actually eating one of those aforementioned coffee shop abominations. I can’t wait until homegirl’s cookbook comes out. Pre-order this month, but it’s not published until April. Talk about a real test of what little patience I have. This reminds me of when the furniture store told me I had to wait 6-8 weeks to get a couch in plain black. I sat on the floor for 6 weeks. Oh was I excited when that couch finally made its way into my living room.

I really like apples. I like to think the batter is just a means of holding all the apple chunks together. So when the recipe calls for 1 cored and diced apple, I’m using at least 1.5 apples, chunky style. That’s just how I roll. Everything else I follow the recipe to a T.

Make a bunch at once. Freeze whatever you don’t plan on eating within 2-3 days. In my case, this means don’t freeze any.
